Chip and I looked through the Walnut piles and found some interesting pieces for your project. Check out this  candidate for a bookmatch to center:

I didn't see any highly figured crotch walnut that was wide enough for a bookmatch to center top. But this is an extremely beautiful piece:

The second one (234) is pretty amazing. I may or may not go with that depending on what the walnut burl pieces look like.

I may end up getting my own woods for the top and back, but I'm unsure about the dimensions with my body. Can you show me what The larger valentino II body with a heart omega would look like, and correct me if these dimensions won't fit.
 
1/4 thick
7.5 inches width per side
8.5-9 per side to bookmatch to center
22 inches in length

I haven't yet desinged the template for the larger Valentino II body shape.  
 
The sizes you've listed above are for the Standard Point bodies, which are slightly larger than what I anticipate the new shape to be. We usually prefer to get wood supplied as lumber instead of bookmatches. So if it's possible, go for 4/4 lumber with the width that suits your decision on the bookmatch to center. Then we'll have enough wood to make the peghead veneers to match.
 
Burls probably won't be up until tomorrow.
