Say What?

Or rather, "Say how?"


There is a beautiful wood, the name of which I have read many times (mostly here) but never heard pronounced.  I have always read it as, more or less, "ZUR-coat", but I just watched a sales vid about a custom Martin, and the store owner demoing it kept saying "zeer-uh-COE-tee".


Could I get the straight poop on how one should pronounce this gorgeous wood's name, please?
