We don't offer any stains - all the colors are in the paint only and can be reversed later (albeit with a full refinish).
If you want to see the grain through the paint, the only choice is Flame Maple. We offer a finish called Almost Black which is what we made most of Jason in Metallica's basses in. From the audience, it looks black, but if you get up close with good light, you can see the grain of the maple through the color.
If you're going for an opaque finish like the Stealth Bass Paul referenced, then you should pick the wood that is best suited for the tone you are looking for or the wood you think you might want to see later if there's any chance you'll not want it black in the future.
